Looking for a spicy recipe, Chipotle Chicken & Rice Casserole, is a great combo of spice, cheese & yummy flavors.  The amount of chipotle peppers can make this dish mild or hot.  If your not into spicy, I would recommend only one pepper.  Like spice, then add 2 chipotle peppers & a bit of the adobo sauce.  Do you have a favorite casserole dish?
